In this lesson, you will learn how to prepare delicious detox soups. These meals are highly nutritious and, if you add the right ingredients, easy to make. Contrary to popular belief, there is a wide variety of soups, and their flavor can be enhanced with tasty and nutritious foods.

Mixed vegetable soup

  • Heat a pot over medium heat.
  • Melt 1 tablespoon of coconut oil in the pot.
  • Add 2 finely chopped scallions.
  • Stir in 2 cloves of minced garlic.
  • Cook these ingredients for about 5 minutes, stirring occasionally.
  • Add 3 cups of chopped mushrooms, 1 cup of diced carrots and 2 cups of broccoli.
  • Season with salt and pepper to taste.
  • Add 2 teaspoons of grated ginger.
  • Add turmeric and cinnamon to taste.
  • Sauté the ingredients for 3 minutes.
  • Pour in vegetable stock to cover the ingredients and bring to a boil.
  • Cook until vegetables are tender.
  • Serve the soup hot.
  • Garnish with seaweed and serve with a citrus juice of your choice.

Onion soup with watercress

  • In a pot, heat 4 tablespoons of avocado oil.
  • Add 2 medium-sized leeks, cut into half moons.
  • Add 4 small yellow onions, cut into strips.
  • Add 4 chopped garlic cloves.
  • Peel 2 green pears and cut them into small cubes.
  • Add the pears to the pot.
  • Stir in 2 teaspoons fresh rosemary, chopped.
  • Add 4 sprigs of fresh thyme.
  • Add 6 cups of vegetable stock.
  • Season with salt and black pepper to taste.
  • Bring to a boil and cook until vegetables are tender.
  • Serve in bowls with a teaspoon of olive oil on top.
  • Serve with a juice of your favorite citrus fruit.

Edamame and Basil Detox Soup

  • Heat 4 tablespoons of olive oil in a skillet.
  • Slice 1 onion into thin strips and add to the pan. Sauté over low heat.
  • Peel 2 medium potatoes and cut into small cubes.
  • Add potatoes to the sauté pan and cook over medium heat for about 10 minutes.
  • Add 2 cups of edamame to the pan.
  • Stir in 2 tablespoons curry powder.
  • Add 2 tablespoons paprika.
  • Add ground cayenne to taste.
  • Stir ingredients for 2 minutes.
  • Pour in 8 cups of vegetable broth and stir while boiling.
  • Add 8 cups more broth as needed, as it evaporates.
  • Boil until potatoes are tender.
  • Season with salt and pepper to taste.
  • Let the mixture cool.
  • Blend until smooth.
  • Add 4 tablespoons of mint and 6 tablespoons of basil leaves.
  • Serve the soup hot or cold.

Corn soup

  • Shuck 6 corn kernels and set aside.
  • Place the kernels in a blender.
  • Add 2 avocados, cut in quarters.
  • Stir in the juice of 1 lime, making sure to remove the seeds.
  • Add 2 serrano chiles, chopped.
  • Add 8 cups of cold water.
  • Season with salt and pepper to taste.
  • Blend at high speed for 3 minutes.
  • Add 2 servings of walnuts.
  • Whisk again until the mixture is well blended.
  • Let the soup stand and chill.
  • Serve in bowls and add the reserved corn kernels.
  • Serve with a juice of your favorite citrus fruit.
