Vitamins: micronutrients that do not provide energy and are only acquired through food, although certain vitamins are produced inside the human body, proportionally they are not enough to satisfy the real needs. In other words, vitamins are absorbed according to the diet. Vitamins can be easily destroyed due to the high sensitivity to various physical and chemical factors, such as heat, light, oxidation, moisture reduction, acids and rulings. For this reason, losses are common throughout the cooking process, especially if foods are subjected to long-term processing.

As examples of hyper-sensitive vitamins: vitamin C, vitamin B, vitamin B1 is the most sensitive.

Vitamin chemistry: In general, they are classified according to the substance in which they are soluble:

  • Fat-soluble vitamins [A, D, E, K]: Vitamins often transferred in dietary fat. Each vitamin performs additional functions related to the proper functioning of the body. A low-fat diet will provide low levels of fat-soluble vitamins, which cause health problems. Conversely, eating too much fat will lead to very high levels of this vitamin, which can be detrimental to the body.
  • Water-soluble vitamins [vitamin B and vitamin C]: these are stored in the water compartment of food. When these vitamins dissolve in water, they are easily broken down in the urine, so they are not concentrated in the body, so regular supplementation is essential to maintain health.
