Workers involved in the production, sale and distribution of food should be aware of the impact that food allergens can have and the need to manage the risks associated with them.

Personnel not working directly with food production should receive specific training necessary for the correct performance of their activities, depending on their responsibilities in this area.

All workers should be aware of the measures to be taken to reduce the risk of cross-contamination with allergens and be encouraged to take immediate action if they suspect a risk of contamination.

During the initial training period, training courses on allergens should be given to all employees joining the company, and refresher courses should be repeated periodically, preferably annually; in addition, all visitors should be informed with the correct instructions to adopt, following good practices in food manufacturing.

The training and awareness plans should contain:

  • General information on allergens.
  • Understanding the presence of allergens in ingredients and raw materials.
  • Information about the hazards and risks associated with allergens.
  • Measures for the design of facilities and equipment, taking into account allergens.
  • Storage procedures for raw materials and products.
  • How good manufacturing practices (GMP) should be implemented. etc.

Due to poor hygiene of personnel or production plants, the health of food is endangered, as the risk of cross-contamination with allergens increases.

These must be taken into account for a better control of allergens:

  • The risk of people mediating as a source of contamination should be taken into account.
  • Appropriate work clothing needs to be provided for specific allergen treatment areas or where the risk of cross-contamination by clothing is higher, in addition.
  • Employees may not bring food or beverages into the production site.
  • All persons entering the facility, whether hired or visiting, must comply with all GMP standards provided to them.
  • A person should be designated within the company who will be responsible for ensuring that all personnel understand and comply with GMPs.
