In this guide, we will help you prepare simple and nutritious dishes from the vegan diet. You can adjust the ingredients and replace the suggested ingredients with those you prefer or have on hand; just make sure to keep the nutritional value and the amount of calories so that the meals are as adequate as the ones we propose below. Tofu stir-fry with noodles: For this recipe you will need the following ingredients:

  • 60 grams of noodles
  • 100 grams of tofu
  • ½ bell bell pepper
  • ½ piece of ginger
  • 8ml soy sauce
  • 1 pinch of curry
  • 1 pinch of granulated garlic
  • ½ teaspoon turmeric
  • ½ lemon
  • Olive oil
  • Parsley
  • Salt
  • Pepper

To prepare the tofu and noodles stir-fry, follow the steps below:

  • First, drain the tofu well and let it rest for a while wrapped in paper towels with something to weigh it down.
  • After a while, we cut it into medium-sized cubes.
  • In a frying pan with oil (little) brown the tofu on all sides of the cubes and set aside.
  • On the other hand, in a pot with boiling water and a little salt, we cook the noodles.
  • This process will take as long as the noodles cooking indications show in relation to the chosen proportion.
  • Once ready, remove the water and rinse them with cold water and set aside.
  • Cut the bell pepper into julienne strips, grate the ginger and sauté in a frying pan for 1 minute.
  • Add salt and pepper to taste, soy sauce and the rest of the spices.
  • In a bowl, mix the tofu and noodles and set aside with the sautéed ingredients.
  • Finally, add parsley to taste.

Quinoa salad with roasted pumpkin: For this recipe you will need the following ingredients:

  • 200 grams of pumpkin
  • ½ onion
  • 35 ml olive oil
  • 100 grams of quinoa
  • Cilantro
  • Mint
  • ½ pomegranate
  • 10 ml lemon juice

To prepare the quinoa salad with roasted pumpkin we will follow the following steps:

  • First preheat the oven for 3 minutes at 200°.
  • Peel the pumpkin and cut it into small cubes; chop the onion into strips, add salt and olive oil and roast both ingredients for 10 minutes.
  • On the other hand, in a pot with hot water and water, cook the quinoa for about 8 minutes.
  • Once ready, drain it and put it in a bowl.
  • In this bowl, mix the previously roasted ingredients and season.
  • Garnish with the herbs from the list of ingredients.

Vegan potato omelette: For this recipe you will need the following ingredients:

  • 35 grams of chickpea flour
  • 200 grams of potato
  • 75 grams of onion
  • 90 ml of water
  • Olive oil
  • Salt

To prepare the vegan potato omelette we will follow the following steps:

  • First we will focus on the potatoes, which take the longest to prepare: peel them and cut them into slices.
  • We cut the onion into long strips and fry them together with the potatoes in a pan with olive oil for 15 minutes.
