In this guide, we will show you how to prepare simple and nutritious vegan dishes. You can modify the ingredients and substitute the ones proposed here for those you prefer or have available, as long as you maintain the nutritional balance and the amount of calories to ensure that the meals are as appropriate as the ones presented below. Chickpea curry: For this recipe you will need the following ingredients:

  • 150 grams of chickpeas
  • 100 grams of coconut milk
  • ½ carrot
  • ½ onion
  • ½ celery
  • 1 clove of garlic
  • 1 gram cumin
  • 1 curry leaf
  • ½ leek
  • 2 grams of curry
  • 2 ml lemon juice
  • Parsley
  • Pepper
  • Salt
  • Olive oil

To prepare the chickpea curry we will follow the next steps:

  • First we cook the chickpeas and set aside.
  • Then, chop the ginger, garlic and onion.
  • Grind to a paste and set aside.
  • In a hot pan place the spices such as cumin, curry and parsley so that they release their aroma.
  • Add the spices to the paste and stir over low heat for 5 minutes. Add the vegetables, salt and pepper to taste.
  • Then sauté the ingredients for 2 minutes and add the coconut milk.
  • Cook for 5 minutes.
  • Add the reserved cooked chickpeas and cook for another 5 minutes.
  • Finally add the lemon juice and serve with parsley to taste.

Seitan with pepper sauce: For this recipe you will need the following ingredients:

  • 175 grams of seitan
  • 100 ml of liquid coconut cream
  • Sweet paprika
  • ½ clove of garlic
  • 1 small spoonful of black pepper
  • 30 ml of white wine
  • 30 of vegetable stock
  • Thyme
  • Salt
  • Olive oil

To prepare the seitan with pepper sauce we will follow the following steps:

  • First drain the seitan and cut it into fillets.
  • Then dry it with kitchen paper and brown it on both sides in a frying pan with oil and set aside.
  • Chop the garlic and add it to the pan with more oil, then add pepper.
  • When the garlic is golden brown, remove it and set aside.
  • Add the wine to the pan and let it evaporate, then add the vegetable stock, thyme, cream and paprika and stir.
  • Add the reserved seitan and cook until the sauce reaches a thick texture.

Vegan hamburgers: For this recipe you will need the following ingredients:

  • 2 ripe avocados
  • 100 grams of onion
  • 120 grams of quinoa
  • 1 lemon
  • 1 bell bell pepper
  • Cilantro
  • ½ teaspoon of granulated garlic
  • Black pepper
  • Bread crumbs
  • Olive oil

To prepare the vegan hamburgers we will follow the following steps:

  • We extract the flesh from the avocados.
  • Chop the cilantro, onion and bell pepper and mix in a bowl.
  • Cook the quinoa and add it to the bowl plus the bread crumbs, lemon juice and granulated garlic.
  • Add salt and pepper.
  • Stir until a dough texture is achieved, adding breadcrumbs to achieve it.
  • Then we divide the dough into the portions we wish to consum
