In this lesson, we will teach you how to prepare vegetarian dishes that are both tasty and nutritious. You can adapt the ingredients and replace the suggested ones with those you prefer or have on hand, as long as you keep the nutritional balance and the amount of calories so that the meals are still as adequate as the ones we propose below.

Avocado salad with whole wheat toast: For this recipe you will need the following ingredients:

  • 4 avocados cut into cubes
  • 4 tomatoes cut into small pieces
  • 4 medium purple onions cut in slices
  • 2 garlic cloves chopped
  • Lettuce leaves
  • 3 boiled carrots cut in slices
  • Black pepper
  • 2 tablespoons lemon juice
  • Whole wheat toast

To prepare the avocado salad we will follow the next steps:

  • First we will prepare an avocado sauce to accompany the salad. In a food processor add 1 avocado, the tomatoes, garlic and onions.
  • We also add the lemon juice.
  • Mix well in the processor until you get the texture of a paste. Add salt and pepper to taste.
  • In a bowl, put the lettuce leaves in the bottom, and mount on top the remaining avocado with the carrot.
  • Serve to taste on whole wheat toast and accompany with the prepared sauce.
  • Do not keep the excess avocado sauce in the refrigerator for more than 2 days.

Fruit salad: For this recipe you are going to need the following ingredients:

  • 2 coconuts cut in half
  • 4 peaches cut in small cubes
  • 10 cherries
  • 1 mango cut into small pieces
  • 2 kiwis cut in small pieces
  • 1 serving of walnuts
  • 1 serving of almonds
  • Mint leaves

To prepare the fruit salad we will follow the following steps:

  • The preparation of this recipe, once we have the ingredients cut, is quite simple.
  • We scrape the coconut mass and separate it from the shell.
  • We must be sure to break the dough into small pieces.
  • In the shell, we join all the ingredients: mango, cherries, peaches, kiwis and mix the fruits.
  • Decorate with nuts and almonds to taste and place a mint leaf on each portion.

Blueberry pudding: For this recipe you will need the following ingredients:

  • 5 cups of oat milk
  • 4 cups of oat flakes (gluten free)
  • 3 small spoonfuls of cinnamon
  • 3 tablespoons of honey
  • 5 ounces of blueberries

To prepare the blueberry pudding we will follow the following steps:

  • In a bowl combine the oat milk, oat flakes, honey and cinnamon.
  • Mix and reserve in the refrigerator.
  • We must leave it in the refrigerator for approximately 5 hours.
  • After this time, check that the oatmeal has softened and remove it from the refrigerator.
  • Serve in bowls and add the blueberries.
  • This dessert can be enjoyed cold or warm.
  • Do not keep excess oatmeal in the refrigerator for more than 1 day.
