In this lesson, we will teach you how to create vegetarian dishes that are both tasty and nutritious. You can modify the ingredients and replace the ones presented here with those you prefer or have on hand; just make sure to keep the nutritional value and caloric content so that the meals are equally suitable as the ones suggested below.

Whole wheat pasta with cauliflower and cherry tomatoes: For this recipe you will need the following ingredients:

  • 80 grams of whole wheat pasta
  • 4 cloves of garlic
  • Parsley
  • ½ kg of cherry tomatoes
  • 1kg cauliflower
  • Olive oil (optional)
  • Pepper

To prepare the cauliflower and cherry tomatoes pasta we will follow the following steps:

  • In a pot, heat water and add a little salt; when it is boiling, add the whole wheat pasta.
  • Read the instructions of the pasta you selected and when it is ready, remove it from the heat and set it aside.
  • Chop garlic and parsley to taste and sauté in oil. Add the cauliflower and cherry tomatoes to the sauce.
  • Once the sauce is ready, add the pasta and stir a few times.
  • Add pepper to taste and a drizzle of olive oil.
  • Do not keep the excess pasta in the refrigerator for more than 2 days.

Vegetable and noodle salad: For this recipe you will need the following ingredients:

  • 30 ounces of pumpkin cut into small cubes.
  • 20 ounces of whole wheat noodles
  • 1kg broccoli
  • 2 bell peppers
  • scallions
  • 4 limes
  • 4 jalapenos
  • cups peanut butter
  • 2 tablespoons lime juice
  • 4 tablespoons honey
  • 2 small tablespoons ground ginger
  • 2 tablespoons garlic powder
  • 4 tablespoons crushed red peppers
  • Black pepper

To prepare the cauliflower and noodle salad we will follow the following steps:

  • First we must cook the whole wheat noodles in a pot with hot water following the cooking instructions for the selected noodles.
  • Once ready, set aside. On the other hand, steam the pumpkin for about 15 minutes until it is done.
  • Set aside.
  • In a frying pan cook the peppers and broccoli, this process should take about 10 minutes, always taking care that they do not lose their crunchy texture.
  • If necessary, add water to prevent the vegetables from sticking to the pan.
  • Add the reserved pumpkin, mix and wait for it to heat up.
  • To prepare the sauce to accompany the salad, mix the peanut butter, lemon juice, honey, garlic powder, ginger and water to achieve the texture of a sauce.
  • To assemble the dish, place the noodles on the bottom and top with the cooked vegetables.
  • Add scallions and jalapenos on top and add pepper to taste.
  • Serve with the sauce.
  • Do not keep leftover noodles in the refrigerator for more than 2 days.

Stir-fried peas and seitan: For this recipe you will need the following ingredients:

  • 1 chopped onion
  • 2 cloves of garlic, chopped
  • 120 grams of peas
  • 100 grams of seitan
  • 80ml of white wine
  • Black pepper

To prepare the sautéed peas with seitan, follow the steps below:

  • In a frying pan with oil, add the onion and sauté it until it reaches its golden point. Add the garlic cloves to the sauté.
  • Wash the peas and add them to the pan with the garlic and onion.
  • Cook for about 8 minutes.
  • While the peas are cooking, dice the seitan.
