Food operators need to know all the information regarding the allergen content of raw materials and ingredients in order to be able to perform an effective risk assessment at any stage of the supply chain.

For this, it is necessary to know whether suppliers understand the importance of allergen risk management and how they carry it out.

Aspects to be taken into account by operators for supplier eva luation:

  • Review the packaging and the existence of correct labeling describing in detail the technical specifications and content of the raw materials.
  • When these substances are derived from allergen sources, it is not appropriate to use general terms such as seasonings or spices.
  • Conduct surveys or audits when necessary to eva luate the use of allergen management practices at each supplier and its operations and document the results of each eva luation.
