  • Determine if the supplier in its risk assessment evaluates the probability of occurrence of possible cross-contacts with allergens and if it is possible to quantify them.
  • Evaluate whether the supplier's specific procedures of use, cleaning and programming allow the elimination of contamination risks.

This analysis to be performed for the supplier. Therefore, it is necessary to:

  • Analyze all allergenic derivatives present.
  • Determine the situations and areas of highest probability of occurrence of cross-contact between allergen-containing ingredients and non-allergenic ingredients.
  • Establish the possibility of undeclared allergenic substances in the final product.

It is necessary to make a list with the profiles of the allergens detected. For this it is necessary to:

  • Consult and verify the relevant specifications of all materials used.
  • Each allergen should be evaluated independently to ensure that cross-contact is considered not only between allergenic and non-allergenic foods, but also between different allergenic components.

  • Processing and mixing stage, storage and transportation.
  • Points of contact or spill occurrence.
