The eva luation of the effectiveness of current control measures and the determination of new measures that can be implemented to reduce risks is known as risk control.

This risk control is determined through the process of monitoring, validation and verification of risk control measures, following good practices in food manufacturing.

Each control measure or combination of control measures must be verified and documented. One of the control measures that is frequently used is cleaning, because it generally ensures that products containing allergens are kept separate from allergen-free products.
