Transcription Cleaning by dragging

The use of the drag-out cleaning method, especially when used in conjunction with other cleaning methods, can be very beneficial in reducing or eliminating allergenic residues.

The drag-out materials used during the use of this method should be used in all areas or equipment of the factory that may have been in contact with allergenic substances, such as processing areas, packaging machinery, etc.

It is not possible to clean the entire main production process, mixers, packaging machines, manufacturing areas, etc. using the drag-out technique alone.

In the drag-out substances used in the use of this technique, their nature and quantity must be considered, and only non-allergenic and inert substances, such as salt, can be used.

An extra drag-out wash should be performed when the drag-out substance used is not an important ingredient in the next production.

For carry-over agents that have already been used, the same safety procedures should be used as for the original allergens, such as identification, handling and storage, as this carry-over material may potentially contain the allergen.

Depending on the risk control of each food processing entity, the carry-over material used for the cleaning of a given production can be used as an ingredient in the production of other batches with similar allergenic characteristics. An example of this can be the salt used in the cleaning of a certain product, which can be used as an ingredient in the
