The knowledge of the role of some substances that are part of food in the origin and characteristics of the allergy is very useful for the common person, who suffers from the disease, to adopt an adequate attitude for the treatment and adaptation of the life regime to his new condition.

People who intend to work or work in the food industry need to be aware of the great responsibility they assume in their job and for this it is essential that they know the terrible effects caused by inadequate procedures and errors during the performance of their tasks.

It is not enough to be aware of our responsibility at work, if we do not have the instruction, organization, discipline, means, methods and procedures that contribute to the proper functioning of the workplace.

In this presentation we describe causes, symptoms and treatments of allergies. We also analyze aspects of the knowledge and actions that must be mastered by men and women who develop their work handling food.
